Astarita presents a book by Antonio Latini (1642-96), an experienced cook, steward, and banquet manager in Naples, The Modern Steward, or the Art of Preparing Banquets Well, with the Choicest Rules of Stewardship, Taught and Applied to Benefit Professionals, and Other Scholars. Other than two modern facsimile Italian limited editions, he says, it has never been published or translated since its original appearance in 1692-94. It covers the fat of the land: cooking without limits, and lean cuisine: cooking for Lent. He adds an essay at the end of each chapter with historical and culinary background and updates.
